A Bold New Chapter in Grand Hotel Elegance

Baroque is Grand Hotel’s newest bar, a refined and elegant space adjacent to the iconic Parlor of the hotel. Designed by the legendary Dorothy Draper & Company in celebration of its centennial in 2025, Baroque honors the signature Modern Baroque style of Dorothy Draper herself. The reimagined space evokes the glamour of old New York through a vibrant palette of emerald green, deep red, black, and gold, along with detailed lattice work and high-gloss finishes. Painted by DiBlasi Painting of New York, the transformation took five weeks to complete and included a dramatic update to the towering bookshelves, now shimmering in reflective dark green.

This marks the first major transformation of the space formerly known as the Audubon Bar since the design partnership between Grand Hotel and Dorothy Draper & Co. began in 1979. With Baroque, Grand Hotel introduces a bold yet timeless venue that pairs luxury with history. At the heart of the bar lies a centerpiece ice block station and a sophisticated, minimalist design that puts craftsmanship at the forefront. Signature cocktails are presented in elegant cut-glassware and feature house-made mixers, artisanal bitters, and precisely tailored ice, from stamped squares to rectangular spears, each chosen to complement and elevate the drink.

Baroque distinguishes itself as a premier brown spirit bar, highlighting rare global whiskies, cognacs, and aged spirits, while also offering select premium vodka, gin, and Champagne. The bar features hand-crafted cocktails, modern classics, and an elevated wine and beer program served with polish and precision. Guests can experience cocktail classes, tastings, and the art of mixology performed with theatrical flair by Grand Hotel’s skilled bartenders. Service is both elevated and approachable, inviting guests to explore a deep and dynamic beverage menu in an atmosphere of vintage glamour.

Complementing the beverage program is Baroque’s continentally inspired cuisine, thoughtfully designed to pair seamlessly with the bar’s offerings. The menu includes luxurious small plates like scallion pancakes with caviar, butter-poached lobster with flaked gold, foie gras mousse, artisanal cheese and charcuterie boards, and truffle burrata with prosciutto. Seasonal vegetables, cured meats, and local cheeses are featured in dishes crafted with light, refined techniques. Whether enjoying crisp sea salt fries or indulging in caviar service, guests are invited to savor the flavors and ambiance of Baroque, a sophisticated tribute to Grand Hotel’s rich legacy and a refined step into its next chapter.
